Honey Bars...A Delicious Blast from the Past


Sorry for the long absence.  Let's see if I can catch you up without putting you to sleep! So, let's start from the beginning.

We had a get together with an old friend and her family.  They were in the area to celebrate the life of her father, and I was so glad we could help out, even if it was just a hot meal and a time of fellowship.

Then, I hosted my little garden club.  I don't know why, but I stress myself out. I know that no one cares what my house looks like, but I do!  I was running like a mad woman trying to get as many things done as I could.  I mean crazy things, like new curtains made for the dining room.  Don't know why they were such a priority all the sudden...the material had been under my bed for 4 years.  Yes, you read that right, four years!

Then, I took our niece Angileah to OSU to visit the campus, and try and help her narrow down her college choices.  Oh, what fun we had, and that will have to be an entire post devoted to that trip.  It was fun to walk down memory lane!

That should get you the highlights.  The other crazy component is my sick child.  My Little Man just can't seem to get well.  We visited the doctor again today, and hopefully we will get to the bottom of this.  I am tired of not being able to make him better.

So, for the little get together I made some honey bars.  They were straight from my Grammy's recipe box, and they were a delight.  They are so simple and good, just be careful, or you will eat more than you planned.  Trust me on this on.  I found out the hard way!

Here is the tutorial on lining a pan.  Place the pan upside down on the counter.

Lay a piece of foil over the pan.

Fold the foil around the pan, creasing on the edges.

Lift the foil off of the pan and flip the pan over.  Place the foil down into the pan.

Press down and secure to the side of the pan.  Trust me on this one, I only learned last year! Now, spray your pan with cooking spray.

In a large mixing bowl combine egg, sugar, honey and oil.

Whisk until smooth.

Add flour, cinnamon and pecans.  Whisk until well combined.

In just a moment it will look like this.

Pour batter into your prepared pan and bake.

While your bars are baking, mix together mayonnaise, milk, vanilla and powdered sugar in a small bowl.

It comes together pretty fast...

Pour the glaze over the hot bars.

When they cool, remove them from the pan.  Using a sharp knife, cut into bars.  I like to make mine small about 1 x1 inch.

Deliciousness on a plate!
Honey Bars

2/3 cup oil
1/4 cup honey
1/2 cup granulated sugar
1 egg
1 cup self-rising flour
1 teaspoon cinnamon
1/2 cup chopped pecans

Glaze:
1 cup confectioners sugar
1 tablespoon mayonnaise
1 tablespoon milk
1 teaspoon vanilla

In a large bowl, combine oil, honey, sugar and egg.  Mix until well combined.  Add flour and cinnamon and mix until incorporated.  Stir in pecans.  Pour into a foil lined 8x8 pan and bake for 25 to 30 minutes.  Be careful not to overcook the bars.

Remove from oven and let stand while you make the glaze.  In a medium bowl, combine the confectioners sugar, mayonnaise, milk and vanilla.  Whisk until smooth and pour over the hot bars.

Allow to cool and cut into squares.
