Weight Watcher Friendly Salad Dressing

I have officially taken the plunge and signed up for Weight Watchers.  It has worked for me in the past, and it can work for me now.  I just have to make sure I track every morsel of food that enters my mouth! Since I am tracking things, I am much more aware of portion size and amounts. 



My beautiful lettuce...I am so sad it is getting too hot and I have to pick it all :(

Today for lunch, I decided I would eat some of the fresh lettuce from my garden and have a wonderful salad.  I also had some smoked turkey from the other night, so I added some fresh cucumber, and I had a great salad. I decided balsamic vinaigrette would be a great dressing, so I stirred up just enough.

If you are familiar with Weight Watchers, you are supposed to have 2 servings of healthy oils each day.  I don't have a problem fitting these in, but need to be for diligent about tracking the amount.  I decided I would only use 1 tsp. of oil for my dressing and see how things went.  So here is the recipe I made for lunch...

1 teaspoon olive oil
1 teaspoon spicy brown mustard
1 teaspoon white balsamic vinegar
1/2 teaspoon Splenda
garlic
salt and pepper to taste

Whisk together in a medium bowl, and toss with your salad ingredients.

I know this sound too good to be true, but it made a great dressing.  I can't stand bottled dressings, but I needed to make sure I am not spending too many points either.  This was the perfect amount, and was only 1 point.  You also get your good oil, so it was a win, win for me.
