So, as you all know, I am officially eating much healthier thanks to Weight Watchers. It has been fairly easy to stay on plan, as long as we don't go out to eat. It is amazing how many hidden calories, or rather points are in restaurant foods! For right now, it is easier to plan our our menu and eat at home.
That being said, I was really craving dessert. I love all things sweet, and really would like a tasty cupcake with frosting, but I don't want to allocate points for such an indulgence. So, I decided to make a creamy strawberry pie. Using Fiber One for the crust was a little tricky, and even a little bran-y, but not too bad considering the low points value.
A few years ago, I made a cool and easy pie. It was simple. Cool Whip, Jello and fruit mixed together and poured into a graham cracker crust. This made a great treat for a hot day. I took that as inspiration, and made this lower in points, and with the crust made from Fiber One, it increased the fiber content and took the points even lower.
This totally blows my "nothing refined" mindset out of the water, but once in a while, it won't hurt.
Cool Strawberry Pie
1 small tub light whipped topping , thawed (I used Cool-Whip light)
1 large package sugar free strawberry gelatin, I used Jello
2 cups chopped strawberries
1 cup Fiber One cereal
2 tablespoons sugar
1 tablespoon real butter, melted
1 egg white
1 1/2 cups boiling water
In a food processor, blend cereal until finely chopped. I made mine the texture of graham cracker crumbs, with a few little twigs. Pour crushed cereal into a pie plate, and add sugar, butter and egg white. Mix together until well blended and press into bottom of pie plate. Place in a 350 degree oven for 10 to 12 minutes until lightly browned.
In a large bowl, combine boiling water and gelatin. Stir until all gelatin is dissolved. Add ice and water to make 1 1/2 cups. Add to gelatin and stir until combined. Once cool, remove any remaining ice cubes and fold in whipped topping. Fold in strawberries and pour into prepared crust that has cooled. Top with any remaining strawberries and chill for at least an hour.
1/8 of the pie has a Points Plus value of 3. Not to bad if you need something sweet!
