There is this quaint little restaurant I love to visit for lunch. They have the best food, and it is truly made with love! They make their own bread, and everything is so fresh you can almost taste the dirt...just kidding about the dirt part, but they scour the area looking for local ingredients that are as fresh as they can be.
One of my favorites is their Spicy Shrimp Salad. It is a great combination of shrimp and spice and served on their freshly baked sourdough bread. To say it is good is an understatement. It is awesome. I crave this sandwich, however I thought I should try and remake it so that I am not wasting an entire week's points on one meal.
My creation was a very close copy. The secret is the Sriracha chili sauce. If Sriracha is new to you, it can be found in the Asian section of most supermarkets. They even carry it in Senatobia, MS, so it is everywhere. I hope you enjoy the lightened version as much as I do. For those of you counting points with me, one third of this recipe is only 3 point plus! This is also great on top of a salad, and if you are running low on points for the day, this would be a great light dinner! For lunch today I had this salad on two slices of Natures Own Whitewheat bread for a grand points total of 6. Throw in a pickle or two, a few carrot and celery sticks, and it was a great lunch!
Spicy Shrimp Salad
1/2 pound large shrimp, boiled, peeled and deveined, and coarsely chopped
1/4 cup celery, finely chopped
1/4 cup onion, finely chopped
1 clove of garlic, pressed or finely grated
1/2 cup plain nonfat Greek yogurt
1 to 2 tablespoons Sriracha chili sauce
Mix yogurt and Sriracha in a medium bowl until blended. Add remaining ingredients and mix until well combined. Chill and serve.
