A Flop Story

This morning, I thought I would share with you a flop story.  You know where you try out something new, and you are so excited to see the results, and you realize it flopped!  That was the case around here this morning.  I was hoping to show you a beautiful Banana Bran Muffin that has a Weight Watcher points value of 2, and instead, I have pictures of hockey pucks!  I am not really sure what happened, and I might have been in too big of a hurry and pulled them out before they were done, but regardless, they taste great, but are very doughy in the middle.

My motivation for these muffins came from the two over ripe bananas sitting on my counter.  I struggled with throwing them away or making a muffin.  The muffins won out, and because I hadn't yet had my coffee, I decided to use a mix that was in the pantry.  It was a honey bran muffin mix, and I thought this would go great with the bananas.  I added Fiber One to up the fiber content and lower the points value, and a little extra baking powder and some cinnamon, and into the oven they went.  They smelled so delicious, and I guess I was starving.  I looked into the oven and they were perfect, and slightly golden around the edges.  They must be done, I thought, so I pulled them out of the oven.  Suddenly they began their descent. You guessed it...they weren't quite done, and so they fell.  Flatter than pancakes. 

I tried one, and the flavor is there.  I will make another batch and share it with you when I give them time to rise.  The Little Man loved them, so here is to hoping the extra fiber doesn't upset his stomach!
