A Little Twist on Cucumber Salad

It's official.  We are drowning in cucumbers!  Anyone want some, I have plenty to share!  I love cucumbers, and am so excited when they finally come in. About two weeks later, I am sick and tired of cucumbers.  When my sweet niece Makenzie was here, I think I burned her out on cucumbers and green beans.  Maybe a week back home has helped that.

Today, I asked Pickles if she wanted some, and she said only if they are like the ones at the Japanese restaurant.  I love those too, so I decided to try my hand at a spicy cucumber.  They are almost like those at our favorite little dive, so I am going to share the recipe with you.  If you too are bored with just plain cucumbers, this will definitely shake things up a little.

I added a little extra Siracha to heat things up...

Spicy Japanese Cucumbers

1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon rice wine vinegar
1 teaspoon soy sauce
3 drops sesame oil
1/4 teaspoon garlic powder
1/4 teaspoon Siracha chili sauce or more to taste
2 to 3 cucumbers, sliced in half, and then sliced into 1/4 inch slices

Combine all ingredients except cucumbers in a medium bowl.  Stir to combine.  Add cucumber and mix until all are coated.  Chill for 30 minutes and enjoy!
