Brownies...Rich, Chocolaty Goodness

Who doesn't love a good brownie?  Ok, I do know some people who don't like chocolate, so this is not for you.  My wonderful Sister-in-law falls into this category, but we won't hold it against her.  I personally love a good brownie.  I will even settle for those from a mix, but usually opt to make ours from scratch.  Brownies are one of the easiest desserts ever!  The best part of these brownies is that they are made in one pan, and poured into a baking pan. I line my pan with parchment paper, so clean up is quick and easy. You could use aluminum foil as well.  I hope you enjoy these great brownies as much as we do!



Melt butter, add chocolate and stir until smooth


Add sugars and stir until combined.


Add eggs, one at a time, then stir in vanilla

Add flour, baking soda and salt.

Brownies

1 stick of butter
3 ounces of unsweetened baking chocolate, coarsely chopped
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup pecans, chopped (optional)

Preheat oven to 350 degrees.  In a medium saucepan, melt butter over medium heat.  Remove from heat and add chocolate.  Stir until chocolate is completely melted. 

Line an 8x8x2-inch baking pan with parchment paper.  Stir sugars into chocolate mixture in saucepan.  Add the eggs, one at a time, beating with a wooden spoon just until combined.  Stir in the vanilla.  Add flour, baking soda and salt to the chocolate mixture.  Stir just until combined.  If desired, stir in nuts.  Spread batter into the prepared pan. 

Bake for 30 minutes. Be sure not to over bake.  Cool in pan.  Cut into squares and enjoy!

Just in case you wanted to know...the easy way to line a pan...

Turn pan upside down and place parchment on the top.


Fold paper around the pan.  Crease the paper or foil.

Place folded paper inside the pan.

    I'm going to try this recipe tonight! I stopped making brownies because my 4-yr-old can't have eggs and mixes don't work well with egg substitutes... but I've never tried brownies from scratch before. I love your blog, by the way. I often find myself wishing we were neighbors... not only so I could be your official taste tester, but so we could chat. You've always been one of my favorite people. I love reading and relating to your adventures as a mom.

  2. Thanks Jennifer! We would be great neighbors, and would have so much fun. I think of you often, and know we would have a great time! I am not sure how the egg substitute would turn out, but I think they would be fine. Let me know how it turns out

    Seriously the best brownies I've ever had. I use ground flax for an egg substitute and it worked beautifully. The only problem was that I ate them all day long!
