Hot Chocolate Mix...Another Gift from the Kitchen

When it is cold outside, who doesn't love a nice warm cup of chocolate?  OK, I might know a few, like my sister-in-law who detests chocolate altogether, but she is the exception, and for that we will forgive her and love her anyway.  I personally love hot chocolate, and the mix you stir up in your kitchen is perfect for a little happy.  If you are like me, there are so many Christmas gifts to give.  This little gift is perfect for a small token of your Christmas love.

I have given this gift in several different ways.  A jar full of mix, decorated with a fabric square on the top in a basket with a mug and either cookies or candy. As a single portion in a small plastic bag nestled inside the mug with a ribbon tied to the handle, or with an assortment of other drink mixes.  The only limit is your imagination.  This is is a great gift to give when you need multiple gifts and don't want to spend a fortune!

I found Christmas mugs at the local department store for less than $1. Some of the craft stores had them also, and they were really cute and on sale 50% off. Can't beat that! If you want something a little more, Williams Sonoma had some really cute hot chocolate sets with a frother and mugs, and that would make a great gift with a jar of hot chocolate mix.  I am curious to hear about what you come up with.

This is about as easy as it comes, so get the children involved and have fun. That is what Christmas is all about. Let the children give this as a gift they made and took ownership of.  I promise, the reward will be priceless!

A little happy...

Place the sifter in the bowl before adding any ingredients...trust me on this one!

Add your powdered milk...

...sugar and cocoa

And a little salt.

And start sifting...see the cocoa already peaking through!
 
Sift until all you are left with is pieces too big to fit through the sifter.  Discard this.

My mountain of hot chocolate mix...

Stir until evenly combined...

It is now ready to package!

I placed 3 tablespoons in a little bag and tied it up with a ribbon.  On a label, I wrote the directions for mixing it up!

Hot Chocolate Mix

3 cups powdered milk
3/4 cup sugar
1/2 cup cocoa powder
1/2 teaspoon salt

Sift the ingredients into a large bowl.  Package the mix into airtight containers, or individual plastic bags.

To make Hot Chocolate:

4 tablespoons Hot Chocolate Mix
1 cup boiling water
Marshmallows or whipped cream (optional)

Place Hot Chocolate Mix into a mug.  Pour in the water. Stir until mix is dissolved.  Garnish with marshmallows or whipped cream or both! If you feel like the barista at Starbucks, drizzle a little chocolate syrup on the whipped cream for the coffee house touch!

I hope you enjoy.  My Mom made gifts like this every Christmas, and it is fun to make these with my children.

Apple Turnovers...

Like I promised last night, tonight is another gift from the kitchen.  My husband loves apple turnovers.  He will request them at any given moment, and sometimes I give in, and sometimes I don't. I have made these in many different variations.  These tonight are the best ones I have ever made.  This recipe essentially makes a homemade puff pastry.  Don't be scared.  It is much easier than you would think.  It just takes a little time to chill in between steps.

If you are chicken and want to take a shortcut, pick up a package of puff pastry in the freezer section. It will be delicious too.  I share this recipe as a gift idea, especially if you can deliver them warm.  There are several neighbors I have that would gladly welcome this sweet treat.  Especially if they are delivered with a little ice cream.

Like I mentioned before, apples are in season now, so they are very inexpensive right now. I think I paid $0.62 a pound for some today. Making the puff pastry is very inexpensive and makes this a low cost treat.  Just don't count the calories.

The finished product...with a side of ice cream.

Mix together flour and salt.

Add butter.

Use a pastry blender and cut in butter until it resembles coarse meal.

Using a fork, mix until a dough ball forms.

The completed dough ball.

Place the dough on a lightly floured surface.

Roll into a 12 x 6 rectangle.

Thinly slice reserved butter and place 1/2 on 2/3's of the dough.

Fold the dough over and into 1/3.

Roll back into a 12 x 6 sheet.

Add reserved 1/2 of the butter on the other 2/3's.  Does this resemble alphabet soup?

Fold again in 1/3. 
And again...
Wrap in plastic wrap and refrigerate for 15 minutes.


Roll into a 12 x 6 inch sheet....this is the last time, I promise

Fold in half lengthwise...

And in half again.  Wrap in plastic and refrigerate for about an hour.

Meanwhile, make the filling... Melt a tablespoon of butter in a heavy skillet.

Peel, core and chop two apples.


Add apples to the butter.


Add cinnamon and nutmeg.

Add a little sugar.  Stir and allow to caramelize. 

Make a slurry of water and flour and mix well.

Add the slurry to the apple mixture and let it tighten up.

The apple mixture is finished, and now it needs to cool for a little while.

Remove the chilled dough from the refrigerator.

Unfold the dough.

Roll out into a square.

Cut dough into 9 even squares.  Mine aren't perfect, but close enough!
Mix an egg and water together.  


Brush the pastry with the egg wash and add the apple filling. Fold the dough over and seal the edges with a fork.

Move to a baking sheet  cut 3 slits in the top of the turnover.  Brush the tops with the egg wash.
Mix together powdered sugar and milk.
Drizzle glaze over your warm turnovers...They are almost ready to enjoy with a scoop of ice cream.
The final product...plated up and delicious!

Apple Turnovers

1 cup of flour
1/2 teaspoon salt
1/2 cup cold butter, divided
1/4 cup water, plus a few tablespoons if needed

Filling:
1 tablespoon butter
2 apples, peeled, cored and chopped
1 teaspoon cinnamon
1/2 teaspoon fresh grated nutmeg
1/3 cup sugar
1/4 cup water
1 tablespoon water
1 egg
2 tablespoons water

Glaze
1/4 cup powdered sugar
1 teaspoon milk

In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly.  Gradually add water, tossing with a fork until a ball forms.  On a lightly floured surface, roll dough into a 12 x 6 inch rectangle.

Cut remaining butter into thin slices.  Starting at a short side of the dough, arrange half of the butter slices over two-thirds of rectangle within 1/2 inch of the edges.  Fold unbuttered third of dough over the middle third.  Fold remaining third over the middle, forming a 6 x 4 inch rectangle.  Roll dough into a 12 x 6 inch rectangle.

Repeat steps of butter layering and dough folding, ending with a 6 x 4 inch rectangle.  Wrap in plastic wrap; refrigerate for 15 minutes.  Roll dough into a 12 x 6 inch rectangle.  Fold in half lengthwise and then widthwise.  Wrap in plastic wrap;  refrigerate for 1 hour.

Meanwhile in a heavy skillet, melt butter.  Add apples, cinnamon, nutmeg and sugar.  Stir and cook until the apples are tender.  Mix together water and flour.  Add to apple mixture and allow to thicken.  Remove from heat and allow to cool.

In a small bowl, combine egg and water.  Beat with a fork until smooth.

Roll dough into a 12 inch square;  Cut into 9 even squares.  Brush with egg mixture and spoon about 1/4 cup filling on each square;  fold dough over filling.  Press edges with a fork to seal.  Place on an ungreased baking sheet.  Brush with remaining egg mixture.  With a sharp knife, cut three small slits in the top of each turnover.

Bake at 450 degrees for 15 to 20 minutes until light golden brown.  Remove to a wire rack. (Or, if in a hurry, glaze on the pan.) Drizzle glaze over the turnovers and serve warm.

Project Christmas Presents

Wow, where has the month of November gone?  As I sit here, it is snowing in Mississippi!  You read that right, snowing and it is not even December yet.  I think snow is pretty, but love for it to pay us a visit when it really accumulates and sticks around for a few days.

Tonight's snow reminds me that Christmas is right around the corner.  Much closer than I would like to admit, and I must get a move on making the handmade gifts I love to give.  I have found that many of our friends are very hard to buy for.  You know the kind that if they want it, they buy it.  Instead of trying to satisfy everyone and stress myself out, I resorted to my creativity.  For several years, I have been making and giving candy and treats.  During my corporate tenure, I sent a box of homemade treats to my very favorite clients.  I have learned that everyone loves a homemade treat, and it doesn't have to be candy.

One of Scott's former coworkers has come to expect his annual treat box.  Scott shared some of our homemade pickles with him, and he fell in love.  So, every year I pack up a box of pickles and jams and send it to him in New Jersey. This box is the perfect gift for the person who has everything!

I share this with you, not because I expect you to channel your inner Martha Stewart, but to encourage you to try your hand at a homemade gift.  Last week, I made a few batches of apple butter, and sweet potato butter and put them in little jars. The apple butter is super easy and is made in the crock pot.  How much easier can you get than that.  It makes the house smell delicious, which is an added bonus.

I put my apple butter in my pressure cooker, but you can simply put it in a large stockpot and boil it in a water bath.  I challenge you to give it a try and see how you do.

In the next few weeks, I plan to share ideas for gifts from the kitchen. If you happen to have access to baby food jars, you are sitting on a gold mine, and they are the perfect container for dip mixes.  I have many friends that spend a fortune on the mixes in the boutique shops, and this is an economical alternative.

Another great idea is to make a hot chocolate, spiced tea or coffee mix and give an individual portion  along with a coffee mug from the dollar store.  It seems like this time of year, you can never have too many little happies to give.

I am excited to share these recipes with you.  Some will be savory and some sweet.  I hope you check back and see what I am cooking up in the kitchen!

Apple Butter... Ready to pack into gift boxes

This is where we started.  These bags of apples were on sale for $0.69 a pound.  I think all these apples were about $12.

First, you peel, core and quarter your apples.


Add 3 cups of sugar, cinnamon, nutmeg and cloves.

Try and carefully stir to coat, and add 1/2 cup of apple juice. Cook on low for eight to ten hours.

I forgot to take a final picture, but it looks just like this.  Dark, and falling apart.  Stir well, and ladle into hot , sterilized jars.  Process according to manufacturers directions.

Apple Butter

3 pound apples, peeled and cored
3 cups sugar
1 tablespoon cinnamon
1 teaspoon grated nutmeg
1/2 teaspoon cloves
1/2 teaspoon salt
1/2 cup apple juice

Place apples in a crock pot and add remaining ingredients.  Stir to evenly coat. (As best you can.)  Turn crock pot on low and cook for eight to ten hours, or overnight. If the apple butter is juicy, remove the lid and turn the crock pot to high, allowing moisture to evaporate.

Once you have achieved the proper consistency, ladle into hot, sterilized jars.  Be sure to clean jars well with a clean cloth and place lids and bands on jars.  I processed mine for 10 minutes in a pressure caner, but you can process for 10 minutes in a water bath.  See canning procedures by Ball if you have questions regarding canning.
